After looking through my cookbooks again last night, I decided one of my new favs is The Urban Vegan. It really has simple, delicious meals. I love any cookbook that I can pick up and make a meal without having to make a million trips to the grocery store for ingredients I can't even spell! (yes, I am being over dramatic!) Anyway, I just wanted to share and maybe get some feedback on other great books!
